1) No. She needs ILR (for which she needs a B1 English test and LITUK passed, plus 60 months on spouse route).
2) One more extension (A2 will do), then ILR (for which B1 is needed)

You're ready to change all the documents related to your son and define his future name's spelling just due to a mistake from HO/yourself? That sounds a bit reckless and unnecessary to me.

It's just how it is with Schengen appointments - there's few of them and a lot of demand. Not sure about the pattern for Italian VFS, but try checking regularly as of now

I assume you arrived on either a visitor visa or as a visitor, so no. You have to get a stamp, so you have a documented right to work.

Its UKVI that's supposed to answer that question. We don't know much yet.

I used a certified copy of my certificate That might be a problem. When I applied (October), they couldn't verify the cooy of cert -> if you sent a copy, you would've been asked to send an original anyway. Hopefully they fixed it already, but it might still happen!
