Don't think FLR is a option either as the form states if you are applying for an extension of stay even though you have completed or are completing 2 years’ leave to enter or remain in the UK as a partner you must provide 20 letters and/or other documents.

It's not just the staff at the Greek Embassy that are rude, the woman at the Italian vice-consulate was rude to my wife as well. You are a British citizen aren't you? If so the Greek embassy should not be asking your husband for anything more than proof that he is married to a British citizen (ie your passport and your marriage certificate). They have no right to ask for details of travel plans, finances, accommodation, etc.
