You are a British citizen aren't you? If so the Greek embassy should not be asking your husband for anything more than proof that he is married to a British citizen (ie your passport and your marriage certificate). They have no right to ask for details of travel plans, finances, accommodation, etc.

What nationality is your wife? Depending on her nationality she may still require a visa to visit another EU country (even for a holiday).

If your girlfriend comes to the UK on a fiancee visa she will not be able to work until you get married. You will need to get married within 6 months and then apply for further leave to remain. Once she is granted FLR she will be able to work in the UK without any restrictions.

Yes you need to provide all the mail spread over the two years if your wife is applying for ILR on the basis of being in a relationship (married or unmarried) with a British Citizen. Just provide them with the address of the accommodation (hotel, etc) that you are intending to book. If you don't end up booking that accommodation (it's full or you change your mind) it doesn't seem to matter.
