If your gained your original visa after 06/10/2019 then you do not need to meet the current rate for the job.

Only your employer can decide which SOC they are willing to use. They have to look at your specific job description and match it on a best fit basis. It is not going to be particularly helpful to attempt to compare one person’s timeline to another’s. There is no consistency and each case is dealt with on its own merits. Some cases are decided in days others take weeks.

You need to apply for the additional 2 COS via SMS.
AND you need to make sure you apply for the correct type of COS, this depends on whether the individuals you wish to employ are currently in the UK or not.

Technically if you are sponsoring your parents through financial or accommodation support to visit then that COULD impact their entry. This would be considered under significant change of circumstances after the issue of the visa. HOWEVER, it is unlikely that they will be stopped or questioned.

The best solution would be to get assurance from your current employer that they will only inform the Home Office at the end of your notice period. That way there will not be any potential problems.

Unless there is a serious change in the process it is reasonably safe to assume that you are unlikely to have your visa cancelled in the next 3-4 months.
I am aware of numerous individuals that are currently into month 7-8 without cancellation.

The most secure and simple solution would be to apply for your new visa from your home country immediately. You could not bring your new child to the U.K. without a dependent visa in any case.

The questions you need to have answers to Then did your previous visa expire - from that point on you have been in the U.K. without valid leave. If that is more than 14 days then you have entered into the period where a GTV or SWV will be refused for overstaying. Considering the answers to the above...
