You need to "book" an appointment in 15 days (for any date that may be available and is convenient for you) not (necessarily) "attend" an appointment in those 15 days.

You will probably have to get someone to keep an eye on the post, that would be the best option till you return back.

I am filling this for spouse naturalisation on the basis of 3 years.

Can someone please confirm do we need to cover the 5 year or 3 years as I have read mixed advice on the forum?

You DON'T need letter from NARIC to confirm the ENGLISH level, only SOC letter confirming the degree will suffice. If my wife applies on the 11/11/15 she will only need to provide absences for the past three years which would mean the absences in year 2012 (198 days) will not be counted but they would still be able to see it in the passport.
