I cannot see any issue at all with cash only. I assume you are fully legal with a till and offer a receipt to every purchase.

A food franchise is a very legitimate business. I have heard anecdotally that HO is being more limiting during initial visas on small restaurants i.e. you have to have a stronger BP. Just pointing out that you can apply for ILR as T1e in 1year and 3 months (or less depending on when you applied for extension at 3 years or 3year and 4 months)

There is nothing in the immigration rules that disallows you from having job/employees for more than the absolute minimum.
