She can not use the expired IELTS again. the only exception for using expired IELTS is to use it in the extension application (from within the UK) provided the same expired IELTS was used in earlier application made by the applicant.

so its advised to do the test again.

Just tick "income from salaried employment" and state your income. Your employer's letter will show you're non salaried. That was how we did it and there wasn't any issue about it.
