There is only one relevant Schengen visa and that's the type C visa. The C visa can be issued for up to five years but you would have to argue with the embassy as to why you need a longer valid visa. Normally six months in a year. Study as an important reason allows a single absence of up to one year. But check if the Spanish have transposed this correctly. The residence requirements for Spanish citizenship may follow different criteria.

The Lithuanian embassy in London confirms (Lithuania allows that only from July this year!!!) visa free travel under the conditions you meet. The Timatic database from the IATA also clarifies this point. It is just not clear what reference database/book those budget airlines use.

Residence is broken after 6 months normally or one year in special important circumstances. Only military service may allow longer absences. So travelling alone on the Residence Card may get you in big trouble. A visitor visa perhaps?

There is no legal requirement to provide the UKBA with such information. You can use whatever other evidence you have to satisfy the residence criterium.

Just as stylist2g2 has pointed out you can take up any job you like. The CoA clearly states that. The employer should be aware of the UKBA guidance which lists the steps (in the Comprehensive Guidance) the employer has to take to legally employ you.

ad 1) I think you'll have to pay, see this discussion.

ad 2) Section 9 of the EEA regulations 2006. You also need to ensure that your reason of absence will be seen as important.

Self-representation may be possible but maybe you want to consult a solictor first for some initial assessment?
