If you ask your passport back, you will need to re-apply
So, effectively, a sponsor is held captive in the UK for however long it takes the Home Office to decide an application? That seems preposterous but should I not be surprised?

If she doesn't have income or assets in her name she will likely get turned down. She has to show good reason why she will return home. Income and assets are good reasons. Lots of family ties also count.

The fact that you went recently to Pakistan doesn't impact on the application. You went there to spend time with her but work commitments mean you have limited leave and you realised that if she comes here instead she can stay for up to six months. That's normal.
