There shouldn't be a problem as you finished your course less than 12 months ago - assuming you submit an application within the next 10 or 11 months.

This is correct. Also, if you appeal the decision should the worst case scernio occur, then you'll still be eligible to work while your appeal is being decided.

As the others have said, I don't think this will be acceptable. You will need to have a certificate, unless you are awaiting your graduation ceremony. You can try submitting your application without it, but I'd suspect that it may well be rejected on that front. Sorry to be the bearer of bad news....

Honestly mate, you appear to have evrything you need. You don't need a letter from the University confirming English language, and you most certainly don't need proof of accommodation.

Anyway, these rules that allow HSMP holders to apply for ILR in person are valid till 6th of April only, I doubt you will succeed in getting an appointment before that date. No - they do not appear to contact employers for each and every application. However, if your HR person is away, surely they'll be somebody else that can answer their questions?

The guidance is unfortunately quite clear on this. The evidence needs to be dated within a month of the date of the application.

This should be OK, as the dates you are claiming points for are stated on the application form.
