You can either come back and take the bio information on same day, or inform Home Office immediately and tell of your unavailability. Personally I think the latter will cause you delays of probably a few months. Good luck.

Yes, if you want to go for ROA route, then once in UK child can easily get UK passport by applying online and its very swift usually, my three year old daughter's passport was delivered within six days of application.

If in doubt then leave blank, book NCS and apply, they'll enter correct one.
