The passport stamp showing entry will be sufficient...you don't need to submit 3 years proof of address.

It appears from your post that you and your wife are separated and she now lives abroad. If so, unless she supports your application for BC and you are able to submit her passport, you will need to wait a further year before you apply.

The instructions to checking officers is not to refuse spouse ILR on lack of finance alone. In fact it isn't mandatory for a spouse to be in employment as long as you are able to support yourselves financially.
