If he's self employed he should be registered with HMRC.

he's already registered and has been paying ni contributions. would an accounts book with clients name/address/amount paid be enough, instead of needing to show receipts?

Does he have an accountant. I know many people who are self employed have used their accountant to prepare the necessary paperwork for visa purposes.
