Update visa when changing employer

Hello,

I am new to this forum and hope this question hasn`t already been posted a thousand times.
I apologise if it`s already posted and I just haven`t seen it.

I am currently on a skilled worker visa valid until 25th July 2024 and got a job offer with a new employer who got approval for a sponsorship after applying and specifically asking for me as employee.
I now have to apply for a change of my current visa and so far haven`t given notice to my current employer.
I have a lot of questions running through my head, but for now this one is the one I hope to get an answer to.
If I apply for a change to a new employer and it would be declined do I still hold my current visa and am allowed to stay in the UK and work for my current employer?
I truly don`t want to end up not having a visa nor a job and to be forced leaving the country.
I am working as veterinary surgeon which is on the shortage occupation list, is it then likely that an application will be rejected?

I am grateful for any information and hope to find answers to my other questions as well here.

You can only apply once you have a CoS from the new employer

yes, but suggest not to give notice in your current job until you have the new permission (visa).

not if all the requirements are complied with
