They are probably not paying tax in their respective countries unless they do not work more than 180 days in the country they are flying to.
Tax is a tricky subject so I wouldn't make that assumption. They may very well be paying income tax to another country, you don't know unless you ask so don't assume it.
Further you are not a citizen of any EU country thus you can't fly to any other country and work in that country unless you have a work visa for that country.
The schengen allows you to travel in Europe NOT work so I think you better forget looking at other countries to work
In order to work as a business traveller, it would have to be for a meeting or conference or training. not actually work
There are business visa for work for short stints but each country has different critieria. This is not going to work for you for now.
Wait for your citizenship for Ireland, then you can go gallavanting wherever you want to work.
