Schengen Visa Help

I am planning to visit Ibiza in July, looked at the Schengen Visa requirements and facing abit of a problem.
-I just graduated in the UK and got the Post-Study work Visa for a year
-It says I need payslips and letter of employment, or a letter from my University. However, I am already no longer studying there and they will not issue me with the letter. Also, I have not gotten a job yet so i do not have both payslipts/letter of employment. However I have all the other documents required.
-I am quite confused on this visa. Do I print out the application form and bring it to the Spanish consulate in London to hand it in? Do I need to make an appointment first?

2. My brother is coming to my graduation so I am bringing him along. He is also Chinese. He already got his visitors visa to come to the UK. What visa does he need to apply to visit Spain? Schengen or does he have to apply directly with the Spanish consulate in China?

Please help me on this. Any help would be greatly appreciated
