Past earnings quesetions - for a newbie

I'm currently applying for Tier 1 VISA from Malaysia. I would sincerely hope that I could seek some assistance on my VISA application. Please advise if there is a free/paid service maybe someone on this forum can advise.

I would like to ask a few questions on earnings for the moments.

I used to work from 2005 till 7th of September 2007 before I go to UK for a year of Master course. I finished my education by September 2008. Please advise if I'm eligible to use my previous earnings dated 1+ year before as evidence? I read the PDF guidance notes and it seems ok because I undertook a year of full time study.

Can I use 1/10/2006 till 30/9/2007 for my earning period and exchange rate as of 30/9/2007? Please note that my last day at work is 7/9/2007.

Briefly, I used to work and the company provided scheme to invest in company stocks, namely RSU and Stock Purchase Scheme. I have sold all of vested stocks before I leave the company. Can I use them as part of my earnings? They are tax free and handled through company sponsored UBS account. I still have all the UBS statements. What else do I need to present as evidence?

For the earnings, must the bank statements be sealed together with a covering letter? I'm not sure if local bank would do that because they have already provided statements on bank letterhead. Neither the seal nor covering letter is mentioned anywhere on the guidance notes even on ukvisas website.
