Generally speaking Schengen visa is not connected to spouse UK visa. And the fact that OP has spouse visa isn’t facilitating the receipt of Schengen visa. The OP shall have valid BRP to be able to apply for the visa outside of country of citizenship.
What is worth saying is that Schengen rules were changed from 02.02.2020. The countries are now issuing visas according to standard rules: first 1-2 times single entry, then half year or one year, later 2 years and then 5 (after two times 2 years visas).
I didn’t read it myself in a source doc, but all travel agencies are giving this as a new rule.
So if you didn’t have Spanish Schengen visa within last 3 years, chance is very high you’ll get a single entry visa.
