Got stage 2 letter but confusing of proof of address

Got stage 2 letter today and require proof of school attending of my children for a past five years and detail of parent meeting on it which I don’t understand why I have to proof this to them as I did not apply under Irish association,so shouldn’t involve with my kids .And they stated I have to send all documents back within 28 days and I couldn’t do that as I will be on my holiday during that times my question is should I just send whatever documents that I having right now to them and the rest following after I come back or it would be better to ask for extension period and send all documents required once I come back from holiday .Thank you.
