Applying for a new skilled worker visa instead of applying to update it

Hi,
I have a slightly unusual situation that I would like advice on. My current employment ends in a few months. I already have an offer at another company that I can start right after. However, the update application takes about 3 months, and the visa website warns that traveling while an update application is ongoing will cancel the application. This is difficult for me, because I need to travel in these 3 months.

I have thought of an alternative plan, where I can travel to outside the UK and apply for a new skilled worker visa. My current employer is fine with me working remotely for this period, as long as I have legal right to work in the UK. My question is, is this possible? Are there specific rules that disallow applying for a new skilled worker visa while you are currently on one? Will my old skilled worker visa be canceled immediately after my new one is issued? Is it possible to control when exactly will the validity of my new visa start so I can time it correctly for my next job?
