Reference confused

Regarding Section 5 Reference and Identity
I am looking into the list(Acceptable professional persons) provided by UKBA.
I have three persons who could be my referee (for my understanding of this section)

1: a British citizen who is a customer support manager of a vat registered company.

2: a British citizen who is a property manger of a charitable, asset owning Registered Social Landlord and Industrial & Provident Society.

3: a British citizen who is a manager(says shift manger) of a vat registered company.

as far as I know No2 does not have a VAT number but on its web-site shows a Housing Cooperation number and an Industrial & Provident Society number(don't know what it is)...now I am not sure whether my friend (no2) is within the list provided by UKBA.
BTW his office e-mail address ending ''org.uk'' and company ending ''ltd''
I found one thing on the list states ''Manager/Personnel officer (of limited company)''
He should be ok?

Can somebody tell me what is the definition of Manager?
as far as I concern they all have manager's title..but not sure what sort of managers are acceptable for UKBA. Can a shift manger be my ref?

I also would like to know how you guys are filling in the section as No2 actually filled in the form for me today.
He put
''Age / Property manager / I met John in 2xxx when we worked together''
he did not put his office e-mail address but private hotmail address
Is that fine for UKBA?
Finally I wonder How they are going to check whether my referee is within the list ? I wonder I wonder
