Proof of employment for company that no longer exists?

I'm in a difficult situation. 5 years ago I worked part time for a company that no longer exists and I can't get any letter that confirms my employment.
I (no longer) have the contract. What I do have is the email conversation that invites me to start and bank statements that show receipt of salary. I am also in the process of receiving statements from HMRC that will show that I worked there, but I have nothing else.
What are my options right now? Other than HMRC statements or HMRC SAR, is there any kind of official evidence I can bring to the NCS? Has anyone been in this situation before?
