EEA application via NCS

Hello. I am applying as 5 + 1 PR.
My main problem is if the NCS employee decides he/she does not want to accept some of the 7-8 documents* I want to submit (additionally to the mandatory ones).
I mentioned all these documents in my cover letter and I don't really want to send a cover letter that is not accompanied by the documents mentioned in it. All of them support my case, however I do not know what's the best approach to use with the NCS person if for some reason they decide they do not want to send everything.
Thoughts / experiences?
* For example letters from employer / university, P60s etc.
