Hi.
The last page of Naturalisation form says
SECTION 10 Evidence of National Insurance contributions covering the relevant period:
• payslips
• P60’s
• letter or letters from your employer or employers confirming you have worked in their
employment including start and finish dates
Two questions?
1. What is "relevant period". E.g. if I have PR do I just sumbit evidence for 5 years?
2. Will 1 letter from employer suffice, if I had worked for this one employer constantly for the past 6 years?

relevant period is up to 10 yeras working back from the date of the AN application - not to be confused with PR.
2. Will 1 letter from employer suffice, if I had worked for this one employer constantly for the past 6 years?
YES - I had 1 letter for 10 years!

I dont have all P60/payslips from each employer - would a letter suffice from each employer?

Employee letters are sufficient.

What if one of the employers have stopped traiding and I cannot contact them?

I thought I'd share my concerns on this very same subject. Yes, I read that Section 10 of the paper application form but I am almost completed my online application. Within the application there is a specifically generated list of required documents. In my case I have worked for past three years for two different companies. I am an employee and have a full National Insurance record for that time. But I have not been asked to provide any documentation for this. I suspect that as I have included my National Insurance Number within the application, UKVI will be able to "see" all of this information online.

Both EEA and non-EEA citizens have to meet the same requirements for naturalisation. But as EEA citizens do not have passport stamp proof, they have to provide alternate proof of residence in the UK.
The OP is an EEA citizen and hence does not have passport stamps to prove his residence in the UK. Therefore the requirement to provide payslips, etc.
As you appear to be a non-EEA citizen (based on the flag on your profile), your passport stamps provide proof of your residence in the UK. Therefore, the proof required for you is different.

I think you might be wrong about the 10 years.
Guide, page 5, states: "Evidence of lawful residence during the 5 (or, if the applicant is married to or in civil
partnership to a British citizen, 3) years before the date of the application"
That what my friend has confirmed as well
I think 10 years of evidence of NI only applies if Home Office has a reason to mistrust you, as Guide page 7 states.
Also, the new online application does not even mention NI contributions.

Well I based this on my own application (paper via NCS) at the time - form asked for 10 years of employment history which I provided (just one employer) - never had any issue with NI. I think there was confusion around the term "relevant period" - sorry if I misled you - go with what the form asks for.
