You are required to complete the form and provide the information it asks. So yes, if you have been in the UK for 10 years, you need to list all your employment. This applies to ALL applicants regardless of immigration route in the UK.

Also What supporting documents can I provide ?

You need to provide the documents stated in the checklist at the end.
