British Citizenship - Proof of Residence

Hi,
I'd be really grateful if someone could kindly help confirm a few questions I had around proof of residence in the UK and trips outside the UK. To clarify, I'm an EU citizen and am applying for settled status now, so do let me know if I'm also missing any requirements for settled status.
1) If I just submit an employment letter for each year in the last 5 years, will this be enough for HO? I'm a bit concerned - I don't really have P60 for every year because some of the "jobs" were essentially unpaid internships (I think on a volunteer basis), so could I also submit a letter confirming volunteering? How does the HO go about checking this (just concerned given not all roles were on a paid basis so don't want it to raise any flags)?
2) Given I may not have P60, do I need to show I was self-sufficient or anything, either for the settled status or citizenship? How do I prove this? I heard insurance might be needed + some sort of proof I wouldn't be a burden on the system? I had family looking after me at this time so not sure how to prove this
3) Trips outside the UK - I filed a request for this data, but it seems to be incomplete, as I often exited by car/with my national ID from the UK. I'm just concerned because I'm not entirely sure how the HO checks - anyone know? Don't want them to have missing data and then simply say that what I submitted was wrong

For queries on settled status, please use the appropriate subforum. I would suggest you apply for and secure settled status before worrying too much about citizenship. The two applications are completely separate, have different requirements and require different evidence to be submitted. If you are not married to a British citizen, you will only be eligible for citizenship a year after your settled status has been granted to you.

No need to prove self sufficiency for citizenship, there used to be a requirement for health insurance but it was scrapped

You need to provide records as accurate as possible. Search your emails for boarding passes/ask your friends and family that were on the trip with you/any other source and collect all the dates for your trips.

Thanks so much for your kind help, really appreciate it! In the employment letter, do you know what should be included? Is it sufficient for the company to just say “this individual was employed between these two dates”, or should any other information be provided by the employer? Obviously letter would be on company paper and with signature, but not sure if any other details are needed.

I used a company letter stating employed from/to, current job title. Addressed to whom it may concern.

Ask HR for an employment confirmation letter on headed paper stating dates of employment and your position. It's a standard letter, they will know how to produce it.

Thanks so much to both of you for your kind responses! I've chatted with HR and it seems parts of my contract were under a volunteering basis. If I provide a letter from HR indicating that I had volunteered with the company from date x to date y (and confirming I was volunteering physically in the UK), would this not pass as proof of residence? I know you said earlier it wouldn't, but I'm sorry I just wanted to double check because I looked through the Form AN guidance and it didn't mention volunteering at all, so wasn't sure how you had found out. Thank you!

A letter of employment designs employment, if volunteering isn't mentioned on the guidance I would assume that it's not something that qualifies as proof of residence. The guidance is murky. It is your choice if you want to use that for applying, I don't even know if anyone on the forum has used such a thing for evidence of residence to be honest.
