I called up HMRC to get the employment history for last 5 years. But they can provide employment history only for past 2 years since I had my NI number generated. As you know when you are on WP or Tier 2, NI number is not a mandatory for employees to have(2 years back).
Please let me know if there are any ways to get employment history when you dont posses NI number for whole 5 years.

You should have had a NI when you started your job on WP or Tier 2. That is mandatory. Your Employer would have contributed for your NI for the last 2 years only. Hence HMRC are correct to say you have only 2 year Employment History.
