ILR and long absence from country, questions

hi

i'm a french citizen (EEA) married with a pakistani wife, she used EEA family permit to come here
Now she will apply for a residence card.
- how much time will it take to process ? i hear it's 6 months ...

MAIN QUESTION :
My company in UK, after 3 years, wish to send me in the middle east, UK company will be the employer, payroll will be in middle east money, for one year, maybe 2 years.
- i have been in uk for 3 years, if i go abroad for 2 years, so I can apply for ILR only after 7 y ears ? (3UK+2abroad+2Uk so that i have 5 years in uk ?) Or can i apply after 3UK+2abroad+5 years CONTINUOUSLY in Uk = 10 years ?

What about my wife ? if she get the residence card and go in another country with me, after 5 years can she apply for ILR ? will it 2 2abroad + 5 years in uk ? or 2+3 years ?

You will lose residency period as far as I know, same for your spouse.
