Help with ILR application from PBS Dependent

Hi members,
Hope you will not mind posting this query here as its related to ILR. My wife will be applying for ILR under PBS Dependent Tier 1(G) category as PEO appointment in few weeks time and I am a British Citizen.
Appreciate if I can get advise on queries below:
1. Do I need to produce payslips and Bank Statements over 12 month period ?
2. Wife is working and does she need to produce payslips over the duration employed as its less than a year?
3. I take that absences for dependent can be mentioned as Holiday. Is it appropriate to do so as it was indeed the case ?

Just provide 3 months.

Not required.

Yes just put holidays. PBS dependant don't require letter for absesnes
What cohabitation documents you're providing?

Cohabitation documents over 3 years(for 4 months) which I am planning to provide are:
1. Council tax joint name
2. Utility bill (Water, Gas)
3. Bank Statements
4. HMRC, NHS letters
5. Birth certificate of the child (holds British passport)
Items 2,3,4 are on invidual names.
Is PEO application date in line with 5 years continuous stay ?
Entry clearance : 26/02/2013
Date of Entry : 05/03/2013
PBS Extension visa expiry: 26/02/2018
PEO Application date : 30/01/2018

Just provide covering upto 2 years.
Is PEO application date in line with 5 years continuous stay ?

No. This is wrong. For pbs dependant it counts from date of entry NOT the date of clearnace
You spose entered on 5th March 2013 so she wil complete 5 years on 5th March 2018.
She can apply within 28 days of this date. She can apply on/after Monday, 5 February 2018

Cancelling is not necessary. The OP can change the appointment, assuming there is availability on 5th Feb.

Just being a devil's advocate, in case ILR application gets refused for an applicant then are they eligible to apply again next day ?

Yes and pay the fees again.
