This might be a strange situation. I will be eligible for ILR from 19th feb 2019(which will 5 years) - I can apply for ILR from 23rd Jan I believe. However if my company tried to terminate my role or cannot proceed further employment, and I get a job in a different company within the next month, by Jan 23rd - should I apply for a tier 2 Switch or ILR?

You will need to apply for a new tier 2. The requiremenr for ILR is that you must be employed by your sponsor and be required for the foreseeable future and you need a letter stating this

You cannot work for another sponsor until you change your visa.
