SET(M) application - absences from the UK

Hi all
Any advice you can give would be greatly appreciated.
We are applying for ILR soon using the form SET(M) as we are married.
The new online application asks this question:
Have you been out of the UK since you started Yes
living here?
We have listed holidays that we have taken our the past number of years. Is that correct to list these here? And do we need to provide evidence of this, e.g. evidence of the leaving the UK and returning etc?

SET(M) - Employment Letter and Payslips query

I'm in a tricky situation regarding my partner's SET(M) application for ILR.
I have two questions:
1. Regarding my Employment Reference Letter
My company has stated that it is against their policy to write a letter addressed "To Whom It May Concern". They have told me I need to provide them with the address of the Home Office to put on the letter. I have explained that there is no address. They insisted I have to provide them with an address. I called the UKVI helpline and they told me to tell HR to put the Sheffield address on the letter, even though we will be submitting biometrics information at a completely different location. My question is do you think this is okay? (As I heard that sometimes the UKVI helpline doesn't give the best information).
2. Regarding my actual HR letter.
I am employed in the NHS and I work across two different departments which means that I receive two different payslips each month (from the same NHS Trust). Annoyingly I only need one set of those payslips to prove I meet the financial requirement, but HR is insisting that they put my total gross income into the employment letter. My bank statement shows two different deposits of salary on the same day every month in my account. Do you think it would be okay to submit the two sets of payslips because of this (even though I only need to submit one set). What concerns me about submitting the two sets is that I don't want to confuse the caseworker and lead to a rejection.
Any thoughts or guidance would be most welcome.

1. Letter should be addressed to UKVI pacificially with or without their address. Even sheffield address where documents used to be sent can be given. No issue.
2. To avoid any confusion where all payslips are not matching then safer will be to attach 12 months of payslips with bank statements under category B.
ILR SET(M) - Bank statement query

I just wanted to double check something regarding bank statements.
I have bank statements for:
15th February - 14th March (shows February pay)
15th March - 14th April (shows March pay)
15th April - 14th May (shows April pay)
15th May - 14th June (shows May pay)
15th June - 14th July (shows June pay)
As I'm not going to receive my full bank statement for 15th July - 14th August) until after our biometrics appointment, I asked my bank to send me a partial statement through the post. They did but DID NOT send any letter with it. The statement they sent me looks exactly like all the statements above except it is just dated from 15th July - 4th August and shows my July pay.
Is this okay to satisfy the Home Office? I'm paranoid thinking would they reject our entire application because I don't have a full bank statement?
Any thoughts or previous experience of this?
