EEA 3/4 Appplication Query

Good Morning
Hoping you all enjoying some sunshine.
We are in process of applying Eea3 and eea4.I am a bit confused as to what can I send with the apllications under following circumstances.
EEA(A8) national exercised treaty right in following order.

03 July 2008 to 02/04/2009 employed-WRS available
04 April 2009 to 16 May 2009 employed -WRS available
20 May 2009 to present self employed as a sole trader with
periods of employment.
My question is that;

1).Does my eea national wife qualify from 03 Jy 2008 for EEA-3 or from 20 May 2009 since she did not complete one year under WRS before being self employed

2). For self emoyment we have all the relevant records available i.e. Tax returns/accounts/NI/bank statements/ads etc.
Do we have to provide full 5 years bank statements for self employment?
Also have lots of invoices, do i need to send these all?
