Renewing EEA2 Both Applicants Self Employed But Complicated

I am going to be renewing my EEA2 in Oct 13. Advice on our documentation would be great.

About Me: (South African) - Currently Holding EEA2
I am self employed and have a company for 6 years. I have a few questions below.

1. I do 2 different returns, one for myself (Self Assessment) & one for my company (P&L, VAT, Corporation tax etc). Which do I need to use as my proof of self employment?

2. Will the above with the below documents be enough.

DOCUMENT LIST
- National Insurance paymnet confirmation.
- Unique Tax Payer Reference.
- Bank Statements company or personal? (3 Months front page only).
- 3 Forms of proof of address. i.e. council tax, tenancy agreement, etc.
- Passport.

About my partner: (Belgian) does not have PR as she had a year gap with no working and had no CSI.
She is self employed and I have been outsourcing work to her from my company and she works from our house/home. She does not have a company registered and has only registered for self assessment. She invoices me for payment and we pay her monthly. Would the below documents suffice.

DOCUMENT LIST
- Letter from our landlord confirming its agreed that my partner works from home.
- National Insurance card
- Invoices to my company above.
- 3 Months bank statements (Personal).
- Residency Card.

Would the above documents work for her? I know they are quite strict when it comes to self employment.
