From ICT long term to Italian citizenship

Hello,
As already clarified in another topic, I hold an ICT long term staff visa issued in August 2011, therefore I can stay in the UK for 5 years max.
However, my husband is Italian descendent and he's in process of acquiring his citizenship, which will happen around mid-2014. At the moment he's in the UK as ICT partner visa.
How's the procedure at the moment he gets his italian passport? How do we 'switch status' to EEA resident before UKBA? Do we even need to do anything or can we just keep living here as italians and let the ict visa expire by itself?
What should happen in our working contracts with our employees? Do they have to 'fire' us and hire again as italians or amend the contracts?

Does one of you become Italian or both? Does the Italian nationality commence at birth or on recognition.

Italians are generally free to live and work in the UK as are their family members. You would not require to break contracts or amend status.
