EEA 3 + EEA - few questions

Hello all!
I’m hoping someone can advise me on the below questions. Apologies in advance if these questions have been asked before (please guide me to the right section). I’ll describe the situation briefly so those who are the guru’s ont his field can advise me.
I’m the EU national (Dutch, exercised treaty right since January 2008)
Worked in full time employment since January 2008 – November 2010
Worked in full time employment November 2010 – ongoing (maternity leave from May 2013 – August 2013). Baby holds British nationality due to me exercising treaty rights.
Husband (non-EU); came to the UK in April 2008. EEA2 issued till 30 March 2014
He studied full time for 2 years (worked part-time) and then went into full time employment thereafter. Currently working as self-employed for the past year.
My understanding is that my husbands EEA4 is issued based on me; exercising treaty right. Which is ok; as we were married when he came here and I’ve been in full time employment since.
Will is suffice if I provide 4 P60 and all my wage slips + current contract?
We will have challenge proving that we have lived together since 2008. As for the first 2 years we lived in a shared room accommodation (bed sit) where the tenancy agreement is in my name (but we did not pay any bills – as it was an all inclusive rate). Only in November 2010 we started paying our bills when we moved to a 1 bedroom apartment. Will this cause any issues. We didn’t have any joint accounts either. Believe he had one bank account which was addressed to the bedsit (perhaps his p60; when he did part-time work during the first 2 years; will this suffice¬
My second question is, we both require our passports back asap. Can we request for the to provide the EEA3 and EEA4 on a paper rather than in our passports .There are 3 reasons for this(since we know wit might take more than 5 months for them to process).
We need to attend a wedding end of June (brings me to another questions, if we don´t get this back before this time does it mean that my husband can´t travel in and out of the country without this pr stamp, because his rc would have expired on the 30th).
Both our passports expired in January 2015
More importantly: my husband’s contract is about to end and he require to have some valid visa in his passport. We have experienced continues challenges with a valid rc in his passport. Now because his contract is about to expired and the RC what will happen now
