Applying for Spouse visa soon. Worried...

I am an EU national, living and working in Scotland since July of 2013. In about 1 month my Spouse (who is currently in South Korea) will be submitting all the paperwork to apply for a spouse visa, so that she can join me in the UK.
Having gone over all the required documentation I am worried if we are missing something on my behalf.
My situation:
-I have worked full time in Scotland from July 2013 - January 2014 at 30k a year.
-I have been working on a contract with a company in the US since January(Web Development Project which will go for 6 months) at $40 (USD) an hour, which comes around 20k GBP a year.
- By mid April, I should have around 6k GBP savings in my Bank account
- I have saved all payslips and can provide all relevant information about my full time job contract.
- I haven't done my taxes for the contract yet, so is this something you could point me to the right direction at?
- A problem is that my lease ends in 1 month and i will be moving to another location. Thus getting a letter from my landlord to verify my location will be difficult
Moreso, I fear that the contract may not seem to be adequate enough for me too seem like a financially secure sponsor, as my current employer is a small company and also non UK based.
Would it help if my spouse shows her financial documents in South Korea where she has been working full time?
