EEA4 application help

Hi there
I have been married to a EEA citizen for 20 years now and lived in the UK for over 10. I have previously applied for residency but it was sent back due to insufficient documentation, At the time I did not look into it as our little girl had to have a heart operation and everything else just did not feature on our priority list.
I am now in the position to go ahead but have heard some horror stories about people being rejected and it being on big money pit.
Will I need documentation for every year I have been living in the UK ? Or will our Mortgage agreement be sufficient ? we bought it over 9 years ago in both our names ? I have HMR letters for this year addressed to me and water account also from the last month at same address would this be sufficient ?
My husband has been self employed in contract work for the last year ( although previously he has worked ) should I include previous work contracts to prove he was exercising his treaty rights as well as current bank statements for his business ?
Any help or advice would be greatly appreciated
