self employed and student

Hi

Please this is quite urgent, i am a non eu spouse of a british citizen who is currently exercising her eu treating rights by being self employed, we have been in ireland since september 10 and we intend to return to the UK on the 20th of december, my question is how can we prove that she was self employed because i was told at the revenue office in ireland that we have to wait till next year to pay taxes, so i am a bit worried about how to convince the UK visa officer that she was self employed or is paying taxes not a reqirement? and also when do you advise us to apply for eea family permit and btw she's also a student in ireland...........please i am looking forward to your reply
