Belgian-Canadian couple moving to UK

Hi,
I've been reading this board extensively for the last days and have to thank you all for your interesting questions and wonderful replies, it definitely helped me out a lot!
We are a Belgian-Canadian couple that got married in Hawaii last September and have been working and traveling around the world for the last 3 years.
I guess we will put both our parental homes as addresses although we have been on the road most of the time. I did live with his parents for a whole year on a Canadian Working holiday visa until April this year in Canada. I had to leave as it is only a 1 year visa. Should I mention all this in my cover letter for him? Or the shorter the better?
Now I know it said don't but we did already plan for a flight and accommodation in Edinburgh on January 21st, is it good to mention that in the application or better not?
Should I also just to make sure attach maybe flight tickets from 2 years ago with both our names on? As we have been traveling mainly we have no common bills.
Then, when we get to Edinburgh can he also look for a job on the 6 months permit? This seems to be very unclear... And then what happens if we dont get his EEA2 in time before the 6 months are over? As we'll have to wait to apply until I found a job etc...
