Preparing for a EEA3 and EEA4 application

Hello I am a non-EEA citizen with a EEA2 Residence card issued 15-Dec-14, and my wife, Spanish citizen with a EEA1 registration certificate issued 15-Dec-14 as well.
We have been married for 8 years
My wife got into the UK at January 2014 and she was working full time from April 2014 to January 2015, then she has been working as self-employed as private Spanish and singing teacher. She is registered as self employed.
I got into the UK at June 2014 and being working as an electronics engineer in an automotive company full time since July 2014.
With my salary, I can pay for all the living cost (rent, utilities and food) and the money My wife gets from her students is for her spending and savings.
My wife got pregnant recently and the due date for the baby is 15 of May 2016.
I am looking ahead for our EEA3 and EEA4 applications, so I can prepare all the necessary documentation needed to get the ILR or PR for both of us and our baby, so I have a couple of questions:
What documentation do we need for my wife as self-sufficient to prove she is exercising her treaty rights?
What benefits can we claim for our baby without affecting our EEA3 & EEA4 applications?
Do we need a CSI being my wife self-employed and full-time employed myself?
I would appreciate any help.
