straight forward (??!) EEA PR processing times.

Hello all
I think i have a straight forward application for permanent residence with a view to getting naturalization.
I am from Chile but have an italian Passport via my mother so i have been living and working in the Uk since 2005.
I am self employed and have a limited company since 2007 and can provide company accounts etc since then.
As well as proof of address, personal bank statements, business bank statements etc.
I am single and applying just for me. worndering what are the chances of making this application myself (not via a lawyer) and how long would it take? my only worry is I may need my passport back as I have young nephews abroad I like to visit often.
Does requesting documents back work?
If I request my passport only, would i get all the other evidence back at the end?
should i include 2 special delivery envelopes for that to happen???
