Proof of right of Residence

My wife is an EEA National. She has moved to UK and start working around August 2014. I am a Non EEA National. I applied for a visa (EEA Family Permit). It was refused on the bases that the ENTRY CLEARANCE OFFICER is not satisfied that my wife (EEA National family member) is residing in the UK. I have submit her working address (and email address), renting address. The dates she enter and when she start working.
My question is, what documentation do she have to provide to proof she is residing in UK?

Pay slips/bank statement showing earnings, council tax statement, utility bills, passport showing entry dates, tenancy agreement.....
The ECO isn't simply going to take your word for your wife's residence. They need documented evidence. :|

This likely won't exist for EEA citizens.

But if she is working, her job contract stating her starting date would also help.

Must the original documents supplied or can she made copies of the documents and certified it with the commissioner or police and then send it to the tribunal?
