Only the spouse, the civil partner, the (grand) children, the (grand) parents and the adopted children of an EEA/EU National can apply under the visa category EEA/EU Family.

Family members of an EEA/EU National holding a valid UK Residence document do not need a Schengen visa to enter Italy, only if the following 2 conditions are met:

travelling with/joining the EEA/EU family member in Italy (EU Directive 2004/38/CE, as implemented by Italian law no. 30 of 6/02/2007)
the UK Residence document literally bears the wording:

Type of Document: "Residence Card of a Family Member of an EEA National"

All family members of an EEA/EU national travelling without the EEA/EU family member must always submit the required documents for a Tourist Visa and will be subjected to the appropriate visa fee.

JURISDICTION

If you reside in England or Wales, you may apply for your visa at the Italian Visa Application Centres in London, Manchester or Cardiff.

If you reside in Scotland or Northern Ireland, you must apply for your visa at the Italian Consulate in Edinburgh located at:

Consulate General of Italy in Edinburgh

32 Melville Street

Scotland, U.K.

I think the safest for you would be To apply for a Shengen visa which is free in your case and takes only 10 working days !
