PR Application - payslips and older docs?

Hi everyone,
thank you first for making such a great forum, I have learned so much already!
I am about to apply for a PR and have spent the last few days compiling documents and requesting HMRC/NI info - but now I read more conflicting advice, so I hope it is ok to ask.
First, myself:
EU National, in UK since 2006 (only have my NI-letter from 2006), worked 1 year, then studied 2007-2011 (did not have CSI, was not aware of it), but I also worked part-time, then after 2011 I worked full-time most of the time (sometimes I had )hour contracts). I had the same address since 2011.
So, documents I have
2006: NINO letter, confirmation letter (PDF printed, sent today) from company advising I worked there Nov 2006 till July 2007, some bank statements
2007-2011: bank statements, credit card statements, confirmation of student status, some payslips, some job acceptance letters, P60s, Tax letter etc. my university degree transcript,
2012-2015: Bank letters, some payslips, bills etc confirmation of job offers/resignation letters
Now, I know I only need to supply detailed evidence of the past 5 years for the PR but that it is helpful if I can send some older documents - even though they are not ' needed' as such, they still can't be copies, correct? I would still need to send my original NI-letter from 2006 for example, and hope I would receive it back?
Secondly, for the qualifying period - I do not have all payslips anymore. I requested HMRCs employment history and NI overview - do I still need ALL monthly bank statements to show an income? The guidance for the application said to send 'to supply at least 2 documents per year, from a variety of sources' - but then people here mentioned sending ALL their payslips in their application and someone being rejected for lack of evidence of work...so I am a bit worried.
Lastly, would you say it is worse to send only 2-3 documents per previous year (pre 2011) therefore risking rejection by not enough detail or is it ok to write a cover letter, detail when I arrived, the evidence of the past 5 years but also for further consideration I have sent some documents showing I have had PR before this year already?
