EEA PR Application - Student and Job Seeker

I first entered the United Kingdom in September 2006. I am a Spanish national. I spent until Dec 2014 reading my batchelors, master and phd and post doc in London. In Dec 2014 I left to Canada only to return back to the UK in Oct 2016. I left to Canada because my boyfriend had to spend time at home. Even though I am now back in the UK with the intention to stay permanently I still don't have an address (I am staying at my boyfriend's who is renting via AirBnB) and I don't have a job. I am however applying for jobs and also in the process of seeing properties to buy.
I want to apply for PR at this stage if at all possible but I am alive of the fact that the 2 year period since I last left the UK is about to expire.
I have some specific questions I would be most grateful to receive any help you can give me:
1) For the period I was a student (Sep 2006 - Dec 2014): what evidence do I need to prove I was excercising qualifying EU rights? I have all university docs to prove I was a full time student but I don't think I have any documents to prove I had private medical insurance. The only private medical insurance I had was one I always had in Spain with BUPA which would only cover me in case of a serious illness abroad. Does anyone know if this would be a problem and could you list the documents I need to put forward to justify my EU rights during this period of time?
2) Since Oct 2016 I am trying to exercise my qualifying rights in the UK so as to stop the clock from ticking. I won't be able to find a place to buy or a job before the 2 year period is up but I can show I have been applying to two vacancies. Are there any practical steps I can take in order to secure my application? Get temporary work for a week or two perhaps before year end? I am also travelling quite a bit during this period (for Christmas etc) which is probably not helping my case. However I expect to be more settled with a job and a house by the end of Feb 2017.
I don't want to lose the opportunity to apply for PR at this stage rather than having to wait for another 5 years.
Any practical advice you can give me I would be most grateful to receive. I appreciate any help given is without prejudice and I would simply be happy to receive any ideas on steps I can take not to lose the opportunity of acquiring PR at this stage.
