I was wondering whether there is any minimum amount of hours you need to work / amount of money you need to earn per week / month in order to qualify as a worker exercising treaty rights?

EU law doesn't specify any minimum working hours or amounts earned, however the home office say work must be "genuine and effective". Google "minimum earning threshold", a search on the forum might also shed some light on your question.
