Me (an EEA National) and my wife (non-eea national) are about to apply for the permanent residency (EEA PR) visa.

I am a self-employed individual.

In order to satisfy the requirement to prove my 5-year consistent work history, would the following documentation be sufficient:

- National Insurance Records: 2007/08 - 2016/17
- HMRC Statement of Account (SA302) - 2007/08 - 2012/13
- P60/P45 - 2007-08/2017/18

I have requested a more up to date version of the SA302 from HMRC. Should I be waiting for this before submitting?

I will strongly recommend you to send bank statements and invoices...
