Help with spouse visa

Hello,
I am a New Zealand citizen, currently in the UK on a Tier 5 Youth Mobility Visa expiring on 1st May 2021. My partner of almost a year, also living in the UK, is a EU citizen with indefinite leave to remain status.
We are looking at registering a civil partnership in the hopes that I can then apply for the Family Spouse visa to stay together here in the UK.
Our main problem is that due to the pandemic I am struggling to find anywhere to hold our ceremony, and am not even sure I will be able to book one in before my visa runs out in 2.5 months. Ideally I would not have to go all the way back to New Zealand to apply for the Spouse visa.
I would REALLY appreciate any advice possible to make sure we have a solid and valid process or if there are other routes we are not aware of.
