Hi,
I have presettled status as a non-EU child of an Italian citizen since 2019. I got married in December 2020. Would it be possible to apply for EUSS for my wife as daughter-in-law as I have been informed I can not apply for her spouse visa till I have settled status?

I don't believe this is possible, in-laws of an EU citizen are not on the list per:
