FM of British Citizen, coming to the UK under EU Law!

My situation is quite complicated and would appreciate any advice. I am currently in the UK on an EEA family permit. My mother (my EEA family member) is a British Citizen, I managed to get an EEA family permit because we had been previously living in Spain. I am going to university in London this September, but I didn't want to apply for a Student Visa, because of complications and I eventually want to become a British Citizen. I am Canadian so I could have applied for an ancestry visa, but while I am a student I didn't want to have to work full time. I couldn't apply for any settlement visas under the British Law through my mother, because I am over 18 and not entirely dependent on her. I could have been registered as a British Citizen before I was 18 but unfortunately my mother did not do that. I think I could apply for an EEA2 residence card, but my mother isn't currently working in the UK, as we only arrived here a few days ago..... So I'm sure if we would qualify for that. But I would like to get this taken care of asap. But I am also worried that I won't qualify to apply for British nationality at the end of 5 years because I don't think that after university I will be dependent on her. I also don't know if my mother will stay here for that, because we still own property in Spain. This is the easiest route I know of at the minute? Does any one know of any other easy way I could live work and study in the UK and then eventually apply for British Citizenship? Any help would be very much appreciated
